Mini Confetti meatloaf
I tried out a new recipe from Sparkpeople the other night and it was a hit! Of course DH was a bit skeptical because it called for vegetables, and cooking them like cupcakes! The kids loved them so much that they brought them to school for lunch. They are super easy to make! You take a simple meatloaf recipe and replace the bread crumbs with oats. Then you chop up your favorite vegetables- I used carrots, zuccini, onion, and orange pepper. most important I used ground turkey instead of beef. Once it is all mixed fill up cupcake papers- in a cupcake tin of course- with 1/4 cup of the mixture. Then bake at 375 for 30 minutes. Yumm!
